Generally speaking I detest the sort of symbolism that makes one think, "Oh, that tree must represent the authors desire to be rooted and start a family" and "Oh, the tree isn't happy, so obviously the author doesn't find happiness from being rooted and having a family". I like the sort of symbolism that makes you think, "Gee, that rock hitting the kid in the head must relate to when the author saw a rock hit a kid in the head". EXCEPT WHEN OTHERWISE NOTED I'd like to think symbolism doesn't exist in my poems, and that they're simply just amusing to read, but I make no guarantees.
